Psychedelicatessen: Ganja Granola

It's tough to be an edibles chef in Michigan, since the state's medical marijuana laws don't specifically mention cannabis-infused foods, which has created a situation with confusing, conflicting interpretations of what's legal.

"There's not really laws against it or for it, leaving it a grey area," explained HIGH TIMES Cannabis Cup-winning chef Joe Kenwabikise from Arborside Delights in Ann Arbor.

Regardless of the legalities, the market for infused foods is booming, with Kenwabikise baking 10 dozen cookies per week to meet growing demand. A biochemistry major and cook with 10 years experience, Kenwabikise joined the Arborside team during the Fall of 2014 and has introduced many new products, including an infused granola parfait that won first place for CBD Edibles at the recent Cannabis Cup in Clio.

"The inspiration was the Cherry Pie strain, so I made a sherbet, aiming for something gluten-free and with no dairy that would be fruity, light and refreshing," Kenwabikise said.

In Ann Arbor, Kenwabikise sees patients looking for edibles that provide a "lot of bang for their buck," he said, explaining that "people like more potency in a smaller bite."

After the Cup win, Arborside Delight's business has exploded, and Kenwabikise is currently making as many parfaits as he can, along with cookies, granola, cheesecakes, medicated honey-roasted peanuts and ice cream cookie sandwiches. Arborside is also working to expand their edibles product line to other provisioning centers throughout the state and hopes that local activists can successfully pass a new House Bill that would specifically allow for edibles and concentrates, as well as defining regulations for dispensaries.

Arborside Delight’s Ganja Granola

Ingredients:
2 1/2 cups rolled oats
1/2 cup slivered almonds, chopped pistachios, sunflower seeds, chopped pecans
1 cup hulled hemp seed
1 1/4 cup shredded coconut
1/2 cup light brown sugar
1/2 teaspoon sea salt
2/3 cup honey (or use weed honey for additional potency)
1/2 cup cannabis infused coconut oil
1 1/2 tsp vanilla extract
1/2 cup dried apricots, thinly sliced
1/2 cup dried cherries
1/2 cup golden raisins

Preheat oven to 250oF.

Mix oats, nuts, flaxseed, shredded coconut, salt and brown sugar.

Combine honey, vanilla extract and coconut oil and whisk until smooth.

Stir in the oats/nuts mixture and spread in a light layer on a parchment covered baking sheet.

Bake for 1 hour, stirring every 20 minutes. After 40 minutes, stir in the dried fruit. After baking, do not stir for
about 20 minutes to let set, then it can be crumbled up or cut into bars.
