Psychedelicatessen: Cannabis Honey Mini Bundt Cakes

As many newcomers rush to join the quickly expanding cannabis industry, it’s important to remember that many dedicated entrepreneurs started their businesses when the “cannabis space” was literally underground in a basement growroom. Corey Thomas grew up in a family that embraced the plant, but cultivating it covertly meant that a certain amount of secrecy permeated everyday life.

“We were taught not to talk about what we do,” Thomas shared, explaining how it can still be a little scary to give interviews, but that it’s more important than ever for small time farmers to step into the spotlight. “I’ve lived in Southern California my entire life, and I need to stand up for what I believe in.”

Thomas helms Honey Pot, producing cannabis-infused honey, tea and topicals that have garnered five HIGH TIMES Cannabis Cup awards, including a recent triumph in San Bernardino resulting in a First Place win in the edibles category for their Tea Pot branded Calendula Guava Mango Black Tea. The road to victory has been a long one, but Thomas credits the support of her friends and family for her incredible success, as well as the six employees who assist in delivering these sought-after products to over 200 California dispensaries.

“It’s been a lot of pounding the pavement, giving away samples and building relationships,” Thomas shared. “And watching the changes in the industry over the last few years has been surreal.”

These Cannabis Honey Cardamom Mini Bundt Cakes pair perfectly with a cup of Tea Pot cannabis-infused tea, so treat your mom (or grandmom) to a healing repast at 4:20 with these delicious little cakes, topped with a dollop of whipped honey cream.

“I’m so grateful that my mom is overwhelmed with joy by the work we have been doing,” Thomas shared. “She even created the original Bear Balm recipe!”

Using an 8-ounce Honey Pot Bear with 250 mg of CBD will create 22 mini bundt cakes, each containing about 11 mg of CBD, a light dose that can ease some of mom’s aches, pains and anxieties. The whipped honey cream topping only adds about another 2 milligrams to each serving. If a larger dose is desired, use some cannabis-infused coconut oil for the cakes as well.

“Coconut oil is one of the most amazing fats available,” Thomas said, “and anything you can put sugar in, you can replace with honey.”

The cannabis-infused honey makes these cakes moist without being overwhelmingly sweet, while the cardamom adds a sophisticated floral fragrance and flavor.

Cannabis Honey Cardamom Mini Bundt Cake & Whipped Honey Cream

Cake Ingredients:
2 cups all-purpose flour
1 cup whole wheat flour
3/4 tsp baking soda
1 1/2 tsp baking powder
1 3/4 tsp ground cardamom
3/4 cup coconut oil or butter, softened
1 8 fl oz Honey Pot Bear (250 mg of THC or CBD)
1/2 cup honey
3 eggs
1 cup buttermilk
1 teaspoon vanilla extract

Whipped Honey Cream Ingredients:
1 cup whipping cream
1 1.5 fl oz Honey Pot Bear (50 mg of THC or CBD)
1 1/2 tsp vanilla extract

A Note on Equipment: I used a 12 cup mini bundt pan. If you don’t have a mini bundt pan, a cupcake pan will also work nicely. If using a standard bundt cake pan, increase baking time to 40 – 45 minutes.

Instructions:

Preheat oven to 350ºF. Spray bundt cake pan with nonstick cooking spray or brush with melted coconut oil.

Combine the dry ingredients (flours, baking powder and baking soda, plus the cardamom) in a large bowl and stir together. Set aside.

In a large bowl or stand mixer, combine the remaining wet cake ingredients (coconut oil, honeys, eggs, milk and vanilla.) Mix lightly and slowly add in dry mixture. Combine thoroughly.

Pour 1/3 cup of batter into each mini bundt cup. Bake for 20 to 25 minutes, until cakes are golden and a toothpick inserted into cake comes out clean. Let cool completely on a wire rack. Gently tap around pan before slowly turning cake onto serving plate.

To make your Whipped Honey Cream topping, beat the whipping cream in a mixer or high-powered blender until peaks start to form. Add in honey and vanilla and beat a little bit more.

Top a mini bundt with a dollop of whipped honey cream for a sweet treat! Enjoy with tea.
